Makes 12 muffins
2 cups old-fashioned rolled oats
2 1/2 cups whole wheat spelt flour
1 cup packed dark brown sugar
1 tsp baking soda
1 tsp baking powder
1 tsp ground nutmeg
1 1/2 tsp coarse salt
1/2 cup raisins
1/2 cup dried prunes, diced
6 tablespoons extra-virgin olive oil
2 large eggs
2/3 cup milk
2 medium ripe bananas, mashed.
Mix all ingredients. Spoon into muffin forms and bake at 180 °C for 25 minutes. Have a happy healthy morning!

I used half buckwheat flour half Schär glutenfree flour for the flour, cut up dates instead of sugar and almond milk as milk … so the good morning muffins just melted away in the evening 😉
