Quick vegan whole wheat bread without yeast for my baby

My baby loves to chew on literally everything. My mother said I should give him some bread to chew while we eat…here you go: baby friendly bruns made in a mom friendly spreed. Only problem is that my boyfriend eats them before they are cool enough for the little one…

250 g whole wheat flour
2 Tsp bakeing powder ( Weinsteinbackpulver)
1 pinc salt
1 Tsp agave syrup
2 Tbsp apple juice
125 ml water

Mix everything to a not to sticky dough, form about 6 little buns. Bake at 180°C for 20 minutes. Done. Save them from hungry boyfriends…

Moroccan Preserved Salt Lemons

This is the special flavour boost that makes not only middle eastern dishes addictive! I used it in a chicken stuffing and it was delicious!!

5 organic lemons
4 Tsp + 1 Tbsp salt
Boiling water
Twist-off glass, large enough to hold 4 lemons

Cut lengthwise creases into 4 lemons as if you would quarter them. This way the lemons are quartered but are still connected in the middle. In these creases sprinkle eacch 1/4 Tsp salt and press together. Put them into the preservation glass together with 1 Tbsp salt and the juice of the fifth lemon. Fill up with boiling water and immediately close. Marinate for 3 weeks.
For cooking use only the lemon peel and juice.

Mulled wine gele

I was puzzeled what to do with left over mulled wine after our christmas party. I came up with the idea to make a little gift for our future christmas guests. This is amazing! This gele is this special kick that adds to any steak or veal dish. Everybody was thrilled!! Oh….and it is suuuper easy and quickly made!

Mulled wine (e.g. 1 litre)
1:1 gele sugar (e.g. 1 kg)

Cook as instructed (e.g. 8 minutes). Fill into twist-off glasses.

OVEN BAKED PUMPKIN

OVEN BAKED PUMPKIN1-2-3 and your one pan, delicious, autumly side dish is ready!

1 small butternut pumpkin (peeled, seeded and cut in wedges)
4 Tbsp olive oil
1 Tsp dried rosemary
Salt and pepper

Preheat oven to 200 °C. Mix everything on a backing paper lined backing pan and spread everything out so wedges don’t touch too much. Bake for 10-15 minutes or until soft in the middle. Season to taste. Done!

NICI’S HONEY-WHISKEY BBQ SAUCE (FOR BBQ CHICKEN OR RIBS)

Spring time is on and so is BBQ season! Here is my special secret recipe for my spicy-sweet BBQ sauce that will make you lick your fingers twice…

 

NICI’S HONEY-WHISKEY BBQ SAUCE (FOR BBQ CHICKEN OR RIBS)

 

2 Tbsp olive oil

1 small onion, very finely chopped

1 garlic clove, crushed

2 Tbsp honey

10 Tbsp ketchup

1 Tbsp apple vinegar

1 Tbsp Worchester sauce or soy sauce

¼ Tsp cumin

¼ Tsp cayenne

(optional: ¼ Tsp liquid smoke)

1Tsp Whiskey

For BBQ CHICKEN:

1 chicken in pieces

In a sauce pan heat olive oil and cook onion until soft but not browned. Add all ingredients and cook for 5 minutes until thickened. Use right away or store in jar glass for a few weeks.

For BBQ chicken:

Marinate chicken pieces in refrigerator for at least 1 hour. Place on BBQ for 30-45 minutes over medium heat or bake on baking paper lined baking pan at 180 °C for 30-45 minutes turning chicken parts every 15 minutes.
Serve on sweet potatoes and asparagus which you add to the oven 20 minutes before the end.

HUMMUS (WITH OLIVES AND FETA)

This is a quickly made, exotic and delicious snack to serve your next unexpected lovely guests. It is prepared in just 5 minutes.

HUMMUS (WITH OLIVES AND FETA)

1 small can chick peas (about 250 g)
4 Tbsp Tahini (sesame puree)
4 Tbsp Olive oil
1 Tsp salt
1 garlic clove, crushed
Pepper
1 Tbsp lemon juice
olive oil and cayenne pepper for decoration

Blend everything in a blender. Add salt and pepper to taste. Arrange on a plate, drizzle with olive oil and sprinkle with cayenne pepper. Serve with olives, feta and white bread.

CHEESY MAC N’ CHEESE (FROM SCRATCH)

CHEESY MAC N’ CHEESE (FROM SCRATCH)

for 2

200 g elbow noodles
3 Tbsp olive oil
2 Tbsp flour
1/2 L milk
120 g old cheddar cheese (or half and half with Gryerzer), ground
Freshly ground pepper
salt
pinch nutmeg
( 1 can tuna drained)

In salted water cook noodles and drain. In the meanwhile heat olive oil in a large pot and sprinkle flour over it. Let brown slightly and carefully add milk while constantly whisking with a whisk. boil on medium heat while whisking until thickened and bubbly. Add half of the cheese and whisk until melted. Then add Noodles (and Tuna) and the rest of the cheese. Add salt, nutmeg and pepper to taste. The consistency should be creamy. Add milk if too dry and boil for a bit if too saucy.
Yummy, yummy ….

AUSTRIAN SERVIETTENKNOEDEL

Knödel

 

 

Perfectly fluffy typical Austrian:

SERVIETTEN-KNOEDEL

for 6 servings

250 g dried bread cubes (Semmelwürfel)

1 medium onion, finely diced

60 g butter

200 ml milk

3 Eggs

40 g all purpose-flour

1 Tsp salt

1 Tbsp parsley

 

Bring water to a boil in a large pot. Meanwhile, in a small pot warm milk and butter until butter has melted. In a medium bowl mix all ingredients until the bread cubes are soft and everything forms a loose homogenous dough. Either form 6 Knoedels with wet hands or place the dough on 30 cm double layered aluminum foil for a Serviettenknoedel (traditionally in a clean dishtowel (Serviette)), roll it up to form a dense sausage and twist the ends to close off. Place the Knoedels into the boiling water and cook for 12 minutes, the Serviettenknoedel should be done in 30 minutes. Unpack the Serviettenknoedel and cut into slices.

CRANBERRY SAUCE

Lingonberries, lat. Vaccinium vitis idaea

It is time to start preparing for Thanksgiving and Christmas…Cranberries are in season!!

This year skip these store bought, way too sweet cranberry sauces…do it yourself!! It is so easy, quickly prepared and an equally great present as it is a wow effect for your guests at your dinner party.

CRANBERRY-SAUCE

For 3 large jam glasses (a 400 ml)

1000 g cranberries

250 ml red wine

1 kg 1:1 gelling sugar

1/2 Tsp acidic acid

¼ Tsp cinnamon

3 cloves

In a pot mix cranberries and wine and let simmer on medium heat for 1 minute. Add rest of the ingredients and boil for 5 minutes. Fill into jam glasses, close and place up side down for 5 minutes. Turn back and let cool.

Perfect for your perfect Turkey dinner party or with your typical Austrian Cordon Bleu!!

SPICY TOMATO SALSA

3 tomatoes
2 scallions
1 small red hot chili (as much as you can take)
1 Tbsp olive oil
2 Tsbp apple vinegar
Salt, pepper

Puree all ingredients in a blender. Done!!
When friends are over the salsa is mostly gone before I can open the taco chips bag….
