APPLE TIRAMISU

apple tiramisu

Surprise your friends with this quick, light and delicious:

APPLE  TIRAMISU

(for 4 persons)

250 ml whipped heavy cream (low fat)

250 g low fat farmer’s cheese (Magertopfen)

8 Tbsp confectioner sugar

250 ml apple sauce

1 Tsp cinnamon

4 cl good rum

16 biscotti

cinnamon and confectioners’ sugar for the top

 

Mix together whipped cream, farmer’s cheese and sugar. Mix together apple sauce and cinnamon in an extra bowl. Shortly dip biscotti in rum and place them on the bottom of a small to medium casserole dish (or in 4 individual small glasses). Cover with cream mixture and then with apple sauce. Continue this over and end with cream. Mix cinnamon and confectioners’ sugar and sprinkle over top.

Chill before serving.

You can in- or decrease the amount of this recipe as desired.

NICI’S COUS-COUS SALAD

Couscous salat

Invited to a summer pick nick or BBQ and want to bring a special side dish but don’t have too much time?

Try this delicious, less than 20 minute recipe for:

NICI’S COUS-COUS SALAD

(Was enough for a party of eight as one side dish)

250 g cous-cous

1 Tsp salt

7-10 Tbsp olive oil

6 Tbsp lemon juice (about 2 lemons)

300 – 400 g cherry tomatoes (diced)

1 leek (or 3 scallions) (cut into thin slices)

1 hand full fresh mint leaves

1 small dried red chili

2 garlic cloves crushed

Salt, pepper

Bring 250 ml water to the boil with 1 Tsp salt and 1 Tbsp olive oil. While stirring mix cous-cous into water, cover and take away from heat. Let sit for about 5-10 minutes, or until cous-cous is tender but firm to the bite. Stir until cous-cous has cooled a bit and won’t lump. Mix with rest of ingredients.

DONE!!! :o)

PINA COLADA TIRAMISU

(for 4 persons)

250 ml whipped heavy cream (low fat)

250 g low fat farmer’s cheese (Magertopfen)

8 Tbsp confectioner sugar

4 Tbsp coconut flakes

5 slices fresh or canned pineapple cut into small pieces

4 cl good rum

16 biscotti

 Mix together whipped cream, farmer’s cheese, sugar and coconut flakes. Shortly dip biscotti in rum and place them on the bottom of a small to medium casserole dish (or in 4 individual small glasses or as shown here in the rind of a pineapple). Cover with cream mixture and them with pineapple pieces. Continue this over and end with pineapple and cream.

Chill before serving.
