Pimp your burger, steak, sandwich or cheese with this delicious:

CARAMELIZED BALSAMIC ONION CHUTNEY

(for 1 small glass)

1 large onion (cut into very thin rings)
3 Tbsp olive oil
2 Tbsp sugar
2 Tbsp raisins
4 Tbsp balsamic vinegar
Salt, pepper

In a pot heat oil and 1 Tbsp sugar until sugar turns gold-brown. Add onions and fry for 3 minutes. Add rest of ingredients and cook until liquid has reduced. Add salt and pepper to taste. Eat warm or chilled.
This chutney has a sweet sour taste.

This is a wonderful chutney for every BBQ!!! :o)

HOMEMADE CITRUS DEODORANT

I read a lot about the dangers of aluminum in our deodorants. If you are interested I can post an article on this topic. Well, apparently you need it to clot your glands and  stop sweating. So, which other possibilities do we have, I asked…
I was very skeptical when I tried this recipe…I mean who makes their own deodorant? Weirdoes!! Well, I must admit I am absolutely thrilled!! This stuff is really good!! Cheap, easy to make, smells good and kept me odorless for 18 hours up to now!! This gets 5 stars from me!!! One more step towards being self-sustained and without toxic chemicals (like aluminum) in my cosmetics!!

CITRUS DEODORANT

Grated lemon peel of ½ fresh lemon
1 Tsp lemon juice
50 ml snaps (Korn, 38%), if you can not tolerate alcohol on your skin just take distilled water instead
50 ml distilled water
1 Tsp baking soda (Natron)

Mix lemon peel, juice, snaps and water and let sit for a minimum of 1 hour (1 let it stand overnight). Strain into a spray bottle and add baking soda. Shake until dissolved.

Done!!!

On the road!!

Are you on the road with your loved ones or do you want to bring a great snack for a trip or pick-nick? This is a quick and delicious savory treat to go…

For 3 sticks

1 filo pastry (Blätterteig)
200 g ham slices cut into small quarters
3 soft cheese (Schmelzkäseecken) or 200g ground mozzarella (Schmelzkäse is really good though)
2 Tbsp sour cream
1 Tbsp oregano
Freshly ground pepper
1 egg, whisked
(2 Tbsp black sesame)

Preheat oven to 180 °C. Mix all ingredients in a bowl. Cut the filo pastry into 3 strips. Place filling in the middle and roll them into long sticks with closed ends. Place them on a baking sheet opening facing down. Brush with whisked egg and sprinkle with sesame. Bake for 25 minutes until golden brown.
For the trip roll them into foil…Enjoy warm or cold!!

MAPLE SYRUP CAKE

Irresistible MAPLE SYRUP CAKE!!!
(Modified from a Martha Stewart Living recipe)

3/4 cup (180 g) unsalted buttur or neutral oil
2 cups all-purpose flour
2 tsp baking powder
1 tsp salt
½ cup dark-brown sugar
2 large eggs
¾ cup maple syrup
2 tsp pure vanilla extract
1 cup sour cream or yoghurt

Preaheat oven to 180 °C. Butter cake pan and dust with flour (I use a Guglhupf Bundt pan).
Melt butter or use oil and mix well with brown sugar, maple syrup, vanilla and eggs in a medium bowl. Mix dry ingredients in a bowl and add to the egg mixture alternating with the yoghurt. Beat until just combined. Fill batter in prepared pan and sooth down the surface. Bake for 35 to 40 minutes or until golden brown and an inserted toothpick into the middle comes out clean. Remove from pan and let cool.
This cake is easy to make and comes out perfect! YUMMMIIIIEEEEE!!!! :o)

ENGLISH-MUFFIN

How does that sound: “Good morning honey, I just made us fresh and warm breakfast buns…” 🙂

Try my delicious and easy ENGLISH-MUFFIN recipe!
400g all purpose flour
1 package dried yeast
1 Tsp salt
2 Tsp honey
200 ml milk
80 g butter, cut into small pieces

In a large bowl mix dry ingredients and honey. Warm milk to a little cooler than hand warm temperature (best at 30 °C, don’t let it get too hot, or it will kill off the yeast and the dough will not rise). Melt Butter in the warmed milk and add to the dry ingredients. Knead to make a smooth dough, that springs back if press your finger in and let go. Cover the bowl with aluminum foil and a dishtowel and put on a warm spot (like near to a radiator or on the windowsill). Let rise for 30 minutes. Preheat oven to 180°C. Knead again so all the air that has formed can escape. Then part the dough into 12 pieces and place into muffin molds. Cover again with a dishcloth and let ride for 15 minutes. Bake in the oven for 15 minutes.

Eat them fresh and warm with cream cheese and jam. They are sooooo good, I can’t stop eating them!!!

In case of the unlikely event that some are left over, store them in an airtight container up to a week.

It is very little work and only a bit of waiting and it is absolutely worth it!!! :o)

How to plant tomatoes…

Upon popular request, here a step-by-step rundown of how to repot plants (nope, it’s not a no-brainer!):

How to repot tomatoes and other veggies:

1. Take out plant from plastic pot; set plant aside
2. Cut out the bottom of plastic pot, and place it over the drain
holes of the larger pot you want to use (this will protect the
holes from clogging with soil when watering)
3. Fill pot with soil until nearly full
4. Add organic fertilizer (e.g. Hornspaene)
5. Mix the soil and fertilizer
6. Dig a hole large enough to fit the plant’s roots (tomatoes
need to be inserted a little deeper than other plants. They
sprout roots from a few inches up their stem, so make sure
you remove any low hanging leaves and cover the first 1
1\2 inches of the stem with soil)
7. Place plant in the hole and fill up the remaining space with
soil
8. Pat the soil down and spread it evenly across the surface
9. Add a large (and I mean large!) amount of water until the
soil muddies up. This process is called sluicing, which helps
to evenly disperse the soil within the container

How to make cute shorts from old jeans…

Reinvent your old pants!

Boot cut is out? Make TRENDY SHORTS (e.g. in folklore style) out of your old jeans!

Here is the step-by-step rundown of how to make shorts from an old pair of jeans:

1. Put the desired old pair of jeans on and mark how short you want the shorts to be. Take jeans off and fold them together back pockets facing each other and smooth down (see picture).With a piece of chalk or a pencil mark where you will cut.

2. Cut both pant legs at once where you have marked them.
3. Carefully unstitch the seam of the side of your pants with a pair of scissors or a special unstitcher.

4. Fold the old seam line inwards and pin a new fabric in desired style to the inside leaving a triangle of mew fabric visible. Since pants are normally very fitted they will be to tight around your thighs if you only cut of the legs, so this is why we increase the diameter of the pant legs with this method for the pants to fit really well and by the way look cool!
5. Sew fabric triangle onto shorts. Either leave the short legs open to have fringes, seam them off or (as I have done it) pin and sew a lace band to the inside of the shorts legs.

This will take about 1-3 hours, depending on how experienced you are with sewing. The possibilities are just about indefinite!

NICI’S SHRIMP SPAGHETTI

You will love this light, Mediterranean, 15 minutes spaghetti dish!

NICI’S SHRIMP SPAGHETTI

For 2

250 g linguine or spaghetti

200 g shrimps, thawed

2 garlic cloves, chopped

250 g cherry tomatoes, halved

2 Tbsp capers

1 hand full basil, chopped

Lots of olive oil (about 50 ml)

Salt and freshly ground pepper

(Chili, if desired)

 

Cook pasta in salted water until al dente. Meanwhile heat 2 tbsp olive oil in a small pan and fry garlic and shrimps until tender, about 5 minutes. Season with salt and pepper while frying. Mix all ingredients (except spaghetti) in a large serving bowl and squash out the juices of the cherry tomatoes with the back of a spoon. This will make the good sauce of the spaghetti dish. Yes, the ingredients are cold, but they will become hot while mixing with the hot spaghetti. Rinse spaghetti and add to the rest. Season one more time and add all the good olive oil. Mix well and quick for it to stay hot. Use more olive oil if it is too dry. Be sure to fetch all the good stuff from underneath while dividing onto plates.

This is one of my favorite dishes!! YUMMY….

CHEESY MAC N’ CHEESE (FROM SCRATCH)

Home sweet home!! Cover in a warm blanket, make yourself comfy on the couch and have a heart warming bowl of

CHEESY MAC N’ CHEESE (FROM SCRATCH)

for 2

200 g elbow noodles
3 Tbsp olive oil
2 Tbsp flour
1/2 L milk
120 g old cheddar cheese (or half and half with Gryerzer), ground
Freshly ground pepper
salt
pinch nutmeg
( 1 can tuna drained)

In salted water cook noodles and drain. In the meanwhile heat olive oil in a large pot and sprinkle flour over it. Let brown slightly and carefully add milk while constantly whisking with a whisk. boil on medium heat while whisking until thickened and bubbly. Add half of the cheese and whisk until melted. Then add Noodles (and Tuna) and the rest of the cheese. Add salt, nutmeg and pepper to taste. The consistency should be creamy. Add milk if too dry and boil for a bit if too saucy.
