This moist delicious cake is just the perfect treat for a coffee brake on a rainy Monday morning!

SPELT-COFFEE CAKE

250 g spelt flour (Dinkelmehl)

250 g brown sugar

1 Package baking powder

1 Tbsp vanilla sugar

1 Tbsp coffee extract or 1 strong espresso

250 ml oil

5 eggs

 

Preheat oven to 180 °C. Mix all ingredients and fill batter into a buttered and floured baking dish (Guglhupf). Bake for 50 minutes. Let cool and remove from dish.

SUNFLOWER-RYE BREAD

Finally I created a recipe that makes bread like from the bakery!!

Quick and easy for a perfect Sunday morning!

SUNFLOWER-RYE BREAD

300 g rye flour

200 g all-purpose flour

1 pack dried sour dough (Alnatura)

1 pack dried yeast

1 ½ Tsp salt

1 Tsp sugar

50 g sunflower seeds

350 ml hand-warm water

Put all dry ingredients in a large bowl. Pour water in the middle and start mixing dough from the side into the middle. Knead until a soft dough has formed that springs back in you press with your finger and form a ball. Sprinkle with flour and cover. Let rise at a warm place for 15 minutes. Knead again and press into a bread baking form. Cover and let rise for 30 minutes. Meanwhile preheat oven to 160 °C. Place a bowl filled with water onto a baking wrack. Place in bread and bake for 45 minutes. The water in the oven will make a wonderful crust on your bread. Let cool and enjoy!!

(makes 3 sticks)

 

20 g castor oil

5 g wool wax (Lanolin anhydride)

7 g bees wax

1 Tsp honey

5 g shea butter

 

In a water bath melt oil, waxes and honey. Pull from heat and melt shea butter in the warm oil-wax mixture. Fill directly into empty, clean chap-stick tube. Let cool completely.

All-natural way to brighten your hair color!

I have been brightening my hair color to light blond for as long as I can think of. Well, now I’ve got the bill: damaged hair.

Since I happen to like blond hair I have tried a few alternatives and I was surprised how easy you can make a hair-treatment that not only lightens the color of your hair with every use, it actually also makes your hair soft and shiny!

Here I have two seasonal options:

 

  1. On a sunny summer day:

 

1-2 lemons (depending on hair length)

 

Sqeeze the lemon juice directly on your hair and rub it in until all of your hair got the good juice. You can also only make highlights. Now take a good book and sit in the bright sun for about 1-2 hours. This really brightens your hair strongly, so make sure that you check once in a while how you like the color. Wash your hair…done!

 

  1. Every day:

 

50 ml water

1 Tbsp dried chamomile flowers

Juice from ½ lemon

3 Tbsp olive oil

4 Tbsp raw honey (not heated)

1 vitamin C fizzy tablet (DM, + Zink), for the color not to come out orange

Boil water and make a strong tea with the chamomile. Let sit for at least 10 minutes and strain. Let cool to room temperature. Dissolve the vitamin C tablet in the tea. Mix in all ingredients and shake or stir until the honey has dissolved. Pour this creamy mixture over your hair and wrap with foil. Warm your head with a blow-dryer until nice and warm but not hot. Cover with a towel and wait for at least 2 hours or best over night. Rinse with shampoo.

During the first treatment you won’t see a big difference in color but your hair will be glowing with shine.  In order to significantly brighten up your hair color you should use this about 5-10 times in a row.

SUNNY SUNDAY ROLLS

Good morning, sunny Sunday! Rise and shine with self made Sunday rolls!

SUNNY SUNDAY ROLLS

(makes 5)

300 g all-purpose four
1 pack dry yeast
1 Tsp sugar
1 Tsp salt
100 ml milk
100 ml water
1 Tbsp butter
Milk for brushing

Preheat oven to 200 °C. Warm milk with water in a small pot and melt butter inside. Let cool to hand warm temperature. Mix flour, sugar, salt and yeast in a large bowl. Press a mold in the middle and add milk-butter mixture. Starting from the middle mix in more and more flour from the side with the milk. Knead until it a flexible, non-sticky, soft dough has formed. (If too dry add water, if too sticky add flour) Make 5 balls and press them slightly onto a baking sheet. Cut a cross into the top layer with a sharp knife. Cover with a dish-towel and let rise for 30 minutes. Bake for 15 minutes. After 10 minutes brush with milk and bake for another 5 minutes. Take out of oven and cover with a dry dish-towel. Let cool.

CHAMOMILE BABY SOAP

For this soap you only need few ingredients and it is easy to make! It is a mild soap good for irritated and sensitive baby (and adult of course) skin! I just love the mild smell and soft feeling on my skin!!

CHAMOMILE BABY SOAP

260 g olive oil

60 g castor oil

80 g almond oil

150 ml destil. water

50 g Lye (NaOH), careful corrosive

20 drops pure chamomile 100 % essential oil

1 Tbsp chamomile flowers

 

1)      Cook dest. water and make a strong tee out of the chamomile flowers. Let it cool and measure 130 ml

2)      CAREFULLY AND SLOWLY ADD lye while constantly stirring. If you get some an your skin immediately neutralize it with strong vinegar. Let cool to about 30 °C.

3)      Meanwhile mix oils in a large glass jar or yoghurt cup and slowly heat oil in a water bath to 30 °C.

4)      Mix lye mixture into the oil mixture.

5)      Mix with a whisk until it thickens until the whisk leaves traces in the mixture that stay visible for a few seconds. If it doesn’t thicken use a hand-held blender and mix until thickened.

6)      Pour into silicon moulds (e.g.for muffins) or whatever form you want it to have. You can also use an empty and cut open milk box.

7)      Cover in a towel to keep it warm and let sit for 24 hours.

8)      After 24 hours take soap pieces out of the molds or cut into pieces as desired.

9)      Let dry on a dry place for 4-6 weeks. In this time the soap will get harder and the pH will sink.

HAPPY MORNING FACIAL CREAM

On my nerdy journey to make all of my cosmetics at home my newest project is making a really good and easy facial cream. After two miserable attempts I have finally found a beautiful rose cream for normal to dry skin that smelly like liquid luck, makes your skin feel soft and look fresh and is done in 15 minutes!! I will continue try and find a cream for oily skin as well…so, stay tuned!!

HAPPY MORNING CREAM

(For about 60 ml)

5 g bees wax
15 g wool fat (lanolin anhydrat)
40 ml almond oil
50 ml rose water
5 drops 100 % essential happy feelings oils (lemon, lime, orange…)
1 Tbsp pure love

In a double boiler melt wool and bees wax. Mix in almond oil and mix well. Warm both fat mixture and rose water to 60°C. Drop by drop add the warmed rose water constantly stirring rigidly. Stirr until cream has cooled down to about 30 °C. (This was always the problem, if you dont stir it until it is cold the cream brakes and water comes out of the mixture) The cream will have a very creamy texture. Add the happy essential oils and mix again. Scoup the cream into 60 ml cream containers.
Kept dark and cool the cream is good for at least 4 months.

 

Low fat tuna lasagne

TUNA LASAGNE

For 4 people

2 Tbsp olive oil

2 onions, chopped

2 cans tuna in water

2 cans tomato sauce with herbs

3 garlic cloves

1 cup white wine

½ chili

Lemon peel of ½ lemon, grated

8 lasagne noodles

2 cups cottage cheese

2 cups mozzarella (low fat)

½ cup parmesan

Salt, pepper

 

Preheat oven to 180 °C. In a large pot heat oil and fry onions until browned. Add tuna, tomato, lemon peel, chili, wine, pepper and garlic. Boil for a few minutes. Season to taste. Meanwhile mix cottage cheese and parmesan. In a casserole start by layering tuna-tomato sauce, then follow by layering lasagna noodles, tuna-tomato sauce, cottage cheese mix, lasagna noodles, tuna-tomato sauce, cottage cheese mix. Top with mozzarella and pepper. Bake for 30 minutes or until golden brown.

Mhhhhh…great for family, friends and just for a comfy TV dinner for two!! J
